Muffin Tin German Pancakes #Breakfast #Kids

I am forever on the lookout for new recipes, particularly for breakfast.  With a couple of picky eaters in my house, it's sometimes difficult to find new ideas for a hot breakfast that everybody can agree on.  We enjoy taking time on Saturday mornings to chill out and have a hot meal before going out to enjoy the day.  Not long ago I was browsing Pinterest and I came across these Mini German Pancakes at Real Mom Kitchen.  I decided to whip them up with D, as she seemed to need a project that morning.  (Keep that in mind when you see the photo!)  We had fun - and the end result tasted pretty fantastic!  

Here is my version of the recipe.  I halved it, as there are only 3 of us (the little man still eats his baby cereal in the morning ;)    




Muffin Tin German Pancakes

1/2 Cup Milk
3 Eggs
1/2 Cup Flour
1/4 Tsp. Salt
1 Tbsp. Butter
1/2 Tsp. Vanilla
Orange Zest (optional)


Filling Options:
Cherry or Apple Pie filling, Fresh Fruit & Berries, Chocolate Chips, etc.

Preheat oven to 400F

Mix the first four ingredients together.  Slowly add melted butter, stirring continuously.  Add Vanilla, and a few grates of Orange Zest if you wish.  (I left this out because I didn't have an orange, but I do think it would be fabulous!)

Measure out the batter into your muffin tins, filling them about half way.  Bake for 15 minutes.   

I filled mine with cherry pie filling as it was all I had on hand.  That being said, I think they would be awesome with fresh blueberries and raspberries and maybe a sprinkling of powdered sugar, or a little dollop of whipped cream if you're feeling extra indulgent.  These make a great toddler/kid food, but can also be fancied up for a nice brunch with friends or family!
